If you haven’t heard, we opened a food truck at our favorite brewery in Minnesota this spring! Hodgepodge is a midwestern mobile kitchen brought to you in partnership with our friends at Forgotten Star — parked right outside a brewery in Fridley. Our menu is a Midwest-inspired, all-you-can-eat menu. It shines with a variety of menu items, unique midwestern ingredients, and an affordable price point, including this delicious corn smash burger!
This burger has been the truck’s best seller so far, and you’ll be able to enjoy it in all its glory if you live here in the Twin Cities. Of course, you can always make it in your own kitchen at home using this recipe!

Burger sauce
Our burger sauce only requires 10 ingredients! You may have all of these common ingredients in your fridge and pantry already. Our burger sauce is delicious and creamymaking it a wonderful pairing for burgers like this sweet corn smashie.
Sweet corn is fun
If you’ve ever visited Hodgepodge, you know that this sweet corn meal is SO GOOD. People have been adding potato chips as a dip, they’ve been slathering them, and they’ve been enjoying them in this delicious corn smash burger. It’s made with simple ingredients, and tastes amazing.
Smash patties
We use 1/4 lb. smash patties, but we stack two in each burg! Top each with a slice of American cheese (the best burger cheese for melted goodness IMO).
A gooooood bun
Don’t let a dry, bready bun ruin a perfect burger! We recommend a brioche or a squishy but inseparable burger bun when paired with a juicy burger, sauce and happiness.

Top Tips for the Perfect Sweet Corn Smashie
- Ignore the quality of your beef: To get the best taste, we recommend using high quality beef.
- Do not grease the pan before frying: We don’t add any moisture or oil to the pan before grilling to get the crispy edges of the smash burger.
- Do not crowd the pan with patties: We cook 2 patties at a time to avoid crowding the pan. Feel free to crush more at once if your pan accepts it.
- More delicious sweet corn = perfect leftovers: There will be more sweet corn. Keep a side salad, add more to burgers or use as a dip for chips.

Hodgepodge Sweet Corn Smash Burger
You will love this sweet corn smash burger! Two smash patties with American cheese topped with an amazing corn relish and homemade burger sauce.

Ingredients
Sweet Corn
- ½ white onion cut off
- 1.5 teaspoons white wine vinegar
- ½ a teaspoon granulated sugar
- ½ a teaspoon sea salt
- 10 oz. corn cobs
- 3 of spoons mayonnaise
- 2 teaspoons fresh lemon
- ¼ cup chopped fresh dill
Special Sauce
- ¼ cup mayonnaise
- ¼ cup full fat Greek yogurt
- ½ cup the sauce
- ¼ yellow onion finely ground
- 4 small dill pickles grayed
- 3 teaspoons boiling water
- 1 a teaspoon granulated sugar
Other Ingredients
- 1 lb. Ground beef
- 2 teaspoons salt
- 8 pieces American cheese
- 12 pickle rounds
- 4 burger buns
Instructions
- Prepare the corn delight. Add the white onion, vinegar, salt, and sugar to a bowl and toss to coat. Add corn, mayonnaise, lemon juice, and dill. Mix to combine. Set aside.
- Combine all the sauce ingredients in a bowl and mix to combine. Set aside.
- Heat a cast iron pan over high heat or heat a flat top to at least 450ºF.
- Add the ground beef and salt to a large bowl. Gently mix the ingredients and divide them into 2 oz. balls, easy to measure with a food scale. Set aside.
- Place two patties in the pan and use a sturdy metal spatula to press each burger into a ¼-inch thickness. Cook for 30 seconds and flip the burger. Immediately add a slice of cheese to each patty. Cook for 30 seconds and quickly remove from the pan.
- Repeat step #4 until all burger patties are cooked.
- Assemble the burgers. Place one burger patty on the bottom and top with three slices of pickles. Finally, add the second burger patty, add 1-2 tablespoons of burger sauce, and 2-3 tablespoons of corn. Add a top bun and enjoy.*
