Description
This classic, traditional potato salad hails from Pantelleria in the Sicilian Islands of Italy. You can make this delicious, healthy, Mediterranean-style recipe in about 30 minutes with only 7 ingredients.
Instructions
- Place the potatoes and water in a pot, cover, and bring to a boil over medium-high heat. Reduce the heat to medium and cook until tender but firm, about 25 minutes. Drain, remove, and let cool.
- Peel and slice the potatoes into slices and place them in a large bowl or large salad bowl, along with the tomatoes, onions, olives, and capers. Toss together gently.
- Drizzle with the olive oil and vinegar and add the oregano, salt (if desired), and black pepper. Toss gently to combine. Serve immediately. (This salad is good served at room temperature or chilled.)
